With Barbie heads there is a code molded on the back of the head, hidden underneath the hair (marked 'A' in the picture). Sometimes the code is handwritten and rather large (as in the picture), sometimes it is printed and can be quite small.
There often is another code molded on the top of the head (marked 'B' in the picture), this looks like some production code as it appears to differ between batches of the same head.
Then there is also the copyright notice molded on the back edge of the neck (marked 'C' in the picture).
Some codes of familiar heads on more recent dolls appear to have a revision code added ("-1").
Also interesting is the new code for the "Carnaval Playline" head, apparently Mattel considers this a new sculpt rather than a revision of the earlier Carnaval sculpt.
It looks like the code on the back of a head matches the catalog number of the first doll that was released with that particular face.
The code seems to refer to the face rather than to the complete head as the same face on a differently shaped head still has the same code, as I observed with my Summer and Fashion Fever Barbie heads.
This list of codes is still very incomplete as my collection is limited and older Barbie heads and those of Collectors Barbies are more densely rooted, which makes finding and reading a code even harder.
I've added the copyright year as molded on the edge of the neck and catalog numbers of the dolls I have checked. Some of the catalog numbers are linked to my B-Girls pages or to a picture.
The face names are linked to illustrated discriptions on Kattis Dolls site, a great online reference for Barbie dolls.
Another great online Barbie reference site is Fashiondollz where a huge collection of Barbie portraits can be found.
Kattis Dolls website now also includes the code on the back of the head for newly released heads.
* H0922 is the catalog number for 2004 Fashion Fever Gillian, so there must be three different versions of the Goddess head: the initial one with five digit code 22044, H0922 and H0922-1
** C6789 is the catalog number for the original 2004 Cali Girl Summer, K8385 is the catalog number for 2006 Beach Glam Teresa, so the Summer face must have been modified for Teresa without changing the copyright year.
Note that 2006 Beach Glam Teresa was initially released with the Teresa version of the Fashion Fever face, it appears that this was changed to the Summer face during production.

When I first saw this picture I noticed that some of the numbers below the heads matched the codes in my list (Goddess, CEO, Asha, Mbili), so I added the missing codes to the list.
A particularly interesting find is that the original Kayla (New Hispanic) and Lea (New Asian) heads each have a different code. The codes match the catalog numbers for the 2001 "Amazing Nails" releases of Kayla and Lea, close comparison of those heads reveals a different shape around the eyes with Kayla having deeper recesses for the eyes.
